Ingredient notes & substitutions

Cremini mushrooms:
Also called baby bellas — deeper flavor and firmer texture than white button mushrooms. Slice them fairly thick so they hold their shape after browning.
Sourdough bread:
Sturdy sourdough holds up to the fillings without getting soggy, and its natural tang balances the rich cheese. Slice about 1/2 inch thick.
Swiss cheese:
