Cheesecake filling

  • 4 oz (113g) block-style full-fat cream cheese, softened
  • 1/4 cup (30g) powdered sugar, sifted

Cookie dough

  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) light brown sugar, packed
  • 1/3 cup (66g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 3/4 cups (210g) all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (150g) fresh strawberries, finely diced and patted dry

    Beat the cream cheese and powdered sugar until completely smooth. Drop 8 even 1-tablespoon dollops onto a parchment-lined plate and freeze at least 30 minutes, until solid. Cream the softened butter, brown sugar and granulated sugar on medium-high for 2 minutes until pale and fluffy, then mix in the egg and vanilla until just combined. Whisk the flour, baking powder, baking soda and salt, then mix into the wet ingredients on low until just a few streaks of flour remain.

    Pat the diced strawberries thoroughly dry with paper towels, then fold them into the dough gently with a silicone spatula. Preheat the oven to 350°F (175°C). Scoop 3 tablespoons of dough, flatten it in your palm, set a frozen cheesecake disc in the center and wrap the dough completely around it. Space the dough balls 3 inches apart on a parchment-lined sheet and bake 13–15 minutes, until pale golden and slightly cracked. Cool on the pan for 10 minutes — the centers set as they cool.

Tips

  • Pat the strawberries properly dry — wet berries make soggy cookies.
  • Don't skip freezing the cheesecake centers; soft filling leaks out during baking.
  • Seal the dough completely around the disc with no gaps — any seam becomes an escape hatch in the oven.
