Ingredients

Fruit
- 3 ripe peaches, sliced into thin wedges
- 1 cup fresh raspberries
- 1/2 cup fresh blueberries or blackberries
Mocktail base
- 1 cup peach nectar or peach juice
- 2 tbsp sugar or honey (adjust to taste)
- 3 cups chilled white grape juice
To finish
- 1 bottle (750ml) chilled sparkling white grape juice (or sparkling water for a less sweet pitcher)
- Fresh mint leaves, for garnish
- 2 cups crushed ice
Method
- 1
Place the ice in a large pitcher and add the peach wedges, raspberries and blueberries. Stir in the peach nectar and sugar, then pour over the white grape juice. Refrigerate for about 2 hours so the fruit infuses the juice. Just before serving, top the pitcher up with the chilled sparkling white grape juice and give it one gentle stir. Pour into glasses, making sure every glass gets a peach wedge and some berries. Garnish each glass with fresh mint leaves and serve immediately while fizzy.

Bon appetit

Tips
- Add the sparkling juice only at the last moment — fizz added early is fizz wasted.
- Too sweet? Split the topper: half sparkling grape juice, half sparkling water keeps the sparkle and cuts the sugar.
- Freeze a few extra raspberries and use them as ice cubes that don't water the pitcher down.
