Pumpkin pie is wonderful and also genuinely annoying to make — the pastry, the crimping, the blind baking, the single pie that serves eight if you are careful. These solve all of that. A pressed shortbread base, a pumpkin filling poured straight over it, one 9x13 pan and sixteen squares at the end. The texture is denser and more custardy than pie, the base is crisp rather than flaky, and they are considerably easier to hand round at a party than a slice on a plate.

For the shortbread base

  • 1 1/2 cups (190 g) all-purpose flour
  • 1/2 cup (100 g) granulated sugar
  • 1/4 teaspoon fine salt
  • 10 tablespoons (140 g) cold unsalted butter, cubed

For the pumpkin filling

  • 1 can (15 oz) pumpkin puree
  • 1 can (14 oz) sweetened condensed milk
  • 2 large eggs
  • 1/4 cup (50 g) light brown sugar, packed
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine salt

To serve (optional)

  • Whipped cream
  • A dusting of pumpkin pie spice

Ingredient notes & substitutions

Pumpkin puree:
Pure pumpkin, not pumpkin pie filling, which is already sweetened and spiced. Check the label — the cans look almost identical.
Sweetened condensed milk:
Provides both the sugar and the custard structure. Evaporated milk is not a substitute; it has no sugar and will not set the same way.
Cold butter:
Straight from the fridge, cubed. The base depends on the butter staying solid while you rub it in.
Pumpkin pie spice:
Or make your own: 1 teaspoon cinnamon, 1/4 teaspoon each of ginger, nutmeg and allspice, and a pinch of cloves.
Eggs:
Two, at room temperature. Cold eggs sometimes seize the condensed milk into small lumps.

Method

    Heat the oven to 350F. Line a 9x13 pan with parchment, leaving an overhang on the long sides — that overhang is how you lift the whole slab out later to cut clean squares.

    Whisk the flour, sugar and salt together, then rub in the cold butter with your fingertips until the mixture looks like coarse crumbs that hold together when squeezed. The butter must stay cold; warm butter makes a greasy base rather than a crisp one.

    Tip the crumbs into the pan and press firmly and evenly across the base with the bottom of a glass. Press hard — a loosely packed base crumbles when you cut it.

    Bake the base alone for 18-20 minutes, until pale gold at the edges. Par-baking is what keeps it crisp under a wet filling.

    While it bakes, whisk the pumpkin, condensed milk, eggs, brown sugar, pumpkin pie spice, vanilla and salt together until completely smooth.

    Pour the filling over the hot base and return to the oven for 32-38 minutes, until the edges are set and the centre still has a slight wobble when you nudge the pan. A fully firm centre means it is overbaked and will crack as it cools.

    Cool completely in the pan on a wire rack, about 2 hours, then refrigerate at least 2 hours before cutting. Cutting a warm slab drags the filling and ruins the edges.

    Lift out using the parchment, cut into 16 squares with a sharp knife wiped clean between cuts, and serve with whipped cream.

Tips

  • Press the base firmly. This is the single most common reason bars crumble when cut.
  • Par-bake the base before the filling goes on, or the bottom stays pale and soft.
  • Pull them when the centre still wobbles slightly. Residual heat finishes the setting.
  • Chill fully before cutting — at least two hours. Warm bars cut into a mess.
  • Wipe the knife between every cut for clean edges.

Variations to try

  • Add 1/2 cup of chopped toasted pecans to the shortbread crumbs before pressing.
  • Swirl 4 oz of softened cream cheese beaten with a spoonful of sugar through the filling before baking.
  • Sprinkle a streusel of flour, brown sugar, butter and oats over the filling for the last 20 minutes.
  • Add a layer of salted caramel over the cooled bars before cutting.

Storage & make-ahead

Refrigerate in an airtight container for up to 5 days — the flavour and texture both improve after a night in the fridge. Freeze cut squares in a single layer, then stack with parchment between them, for up to 3 months; thaw overnight in the refrigerator. Serve cold or at room temperature, never warm, or they lose their structure.

Frequently asked questions

Why did my bars crack on top?
Overbaked. Take them out while the centre still wobbles slightly — the residual heat finishes setting them as they cool.
Can I use fresh pumpkin?
Yes, but it must be roasted and drained well. Fresh puree holds much more water than canned, and a wet puree will not set.
Can I make these ahead?
Yes — up to 3 days ahead, and they are better for it. Keep them covered in the fridge and cut just before serving.
Why is my base soggy?
The base was not par-baked, or not pressed firmly enough. Both steps matter.
