- 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
- Salt and pepper, to taste
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 1/2 cups long-grain white rice
- 3 1/2 cups low-sodium chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 3 cups small broccoli florets
- 1 1/2 cups shredded sharp cheddar cheese
- 1/4 cup grated Parmesan
- 1/2 cup milk
Ingredient notes & substitutions
- Chicken breasts:
- Boneless skinless, cut into even 1-inch pieces so they cook through at the same rate. Thighs work too — extra juicy and forgiving.
- Long-grain white rice:
- Its light, separate grains soak up the broth without turning gummy. Toasting it in the butter deepens the flavor.
- Sharp cheddar:
- Sharp gives the biggest flavor return. Shred it fresh from a block — pre-shredded has anti-caking agents that stop it melting smoothly.
- Broccoli:

- Chicken broth:
- Low-sodium so you control the salt. The rice-to-liquid ratio here (1½ cups rice to 3½ cups broth) is the sweet spot for tender rice with a creamy finish.

Season the chicken generously with salt and pepper. Melt the butter in a large Dutch oven over medium-high heat.
