Ingredients

Quesadillas
- 2 flour tortillas
- 1 cup cooked chicken, chopped
- 1/2 tsp paprika + pinch of cumin
- 1/2 cup mixed shredded cheese
To pack
- Tortilla chips
- Small cup of salsa
- Watermelon cubes
Method

Toss the chopped chicken with paprika and cumin, then layer with cheese between the tortillas.

Toast in a dry pan until golden and melty, then cut into triangles.

Pack the quesadilla triangles in the bento box with tortilla chips, a cup of salsa and watermelon cubes.

Cool fully before closing the lid, and keep chilled.
Tips
- Press the quesadilla with a spatula while toasting for even, crispy golden spots.
- Pack the salsa in a separate sealed cup so the chips stay crunchy in the box.
- Pat the watermelon cubes dry so they don't leak into the other compartments.
