This is the cheesecake that makes your kitchen smell like Christmas morning — deep molasses, warm ginger and cinnamon baked into a filling so silky it practically melts on the fork. The gingersnap crust adds a spicy little crunch under all that creaminess, and the whipped cream swirls with tiny gingerbread men on top turn it into a genuine centerpiece dessert. It takes a little patience (that overnight chill is non-negotiable), but almost everything happens hands-off in the oven or fridge. Make it the day before your holiday gathering so it has time to firm up and you have zero stress on the big day. Slice it thin — it's rich — and watch it disappear anyway.

Ingredient notes & substitutions
- Gingersnap cookie crumbs:
- These give the crust its signature spice — swap in graham crackers if you want a milder, more classic base.
- Molasses:
- Use regular (not blackstrap) molasses for that deep, warm gingerbread flavor without too much bitterness.
- Cream cheese:
- Full-fat blocks softened to true room temperature are key — cold or low-fat cream cheese leaves lumps you can't beat out.
- Sour cream:
- Adds tang and extra silkiness to the filling; full-fat Greek yogurt works in a pinch.
- Ground ginger, cinnamon, nutmeg and cloves:
- This spice blend is what makes it taste like gingerbread rather than plain cheesecake, so don't skip or skimp on any one of them.
- Eggs:
- Room-temperature eggs blend in smoothly on low speed and are far less likely to cause overmixing or cracks.
Method
- 1
Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan; wrap the outside in foil if using a water bath.
- 2
Mix the gingersnap crumbs, brown sugar and melted butter until like wet sand, press firmly into the bottom (and slightly up the sides) of the pan, and bake 8 minutes. Cool slightly.
- 3
Beat the cream cheese until completely smooth, then beat in the brown sugar and molasses until fluffy.
- 4
Mix in the sour cream, vanilla and all the spices and salt until smooth.
- 5
Add the eggs one at a time on low speed, mixing just until combined — don't overmix, or the top cracks.

- 6
Pour the filling over the crust and smooth the top. (Optional: set the pan in a larger pan with 1 inch of hot water for a crack-free bake.)
- 7
Bake 55–65 minutes, until the edges are set but the center still jiggles slightly. Turn off the oven, crack the door, and let it cool inside 1 hour.
- 8
Run a knife around the edge, cool to room temperature, then refrigerate at least 6 hours or overnight.

- 9
Release the springform, pipe whipped cream swirls around the top edge, stand mini gingerbread men in the swirls, and dust with powdered sugar. Slice with a hot, clean knife.

Tips
- Room-temperature cream cheese, eggs and sour cream give the silkiest, lump-free filling.
- Don't overmix once the eggs go in — too much air is what cracks a cheesecake.
- The overnight chill is essential; the texture and flavor both firm up dramatically as it sets.
Variations to try
- Swap the gingersnap crust for a graham cracker or even a chocolate wafer crust if gingersnaps aren't handy.
- Add 1/2 cup finely chopped crystallized ginger to the filling for extra bite and texture.
- Skip the water bath and just watch the bake time closely — the crack-free method is optional, not required.
- For a boozy version, add 1 tablespoon of dark rum or bourbon to the filling along with the vanilla.
Storage & make-ahead
Keep the cheesecake covered in the fridge for up to 5 days — the flavor actually deepens after a day or two as the spices settle in. To freeze, chill it fully first, then wrap the whole cake (or individual slices) tightly in plastic and foil and freeze up to 2 months; thaw overnight in the fridge before decorating with whipped cream and gingerbread men, which don't freeze well. This is a great make-ahead dessert: bake and chill it up to 2 days before serving, then add the whipped cream topping just a few hours before guests arrive.
Frequently asked questions
- Why did my cheesecake crack on top?
- Cracks usually come from overmixing after the eggs go in or from a too-hot oven — beat on low just until combined, and consider the water bath method for extra insurance.
- Do I really need to chill it overnight?
- Yes — the cheesecake is noticeably wetter and less flavorful if sliced early; a full 6-8 hours (or overnight) lets it set properly and the spices meld into the filling.
- Can I make this without a springform pan?
- A springform pan is really the best option since you need to release the sides cleanly; a deep pie dish works in a pinch but you'll be serving it spoon-style instead of in neat slices.
- How do I get clean slices?
- Dip a sharp knife in hot water, wipe it dry, and slice — repeat between each cut so the filling stays clean instead of dragging.
