Ingredients

  • 500g cream cheese
  • 180g sugar
  • 3 large eggs
  • 300ml double cream
  • 2 tbsp cornstarch
  • 1 tsp vanilla

Method

    Mix everything until completely smooth.

    Pour into a cake pan lined with parchment paper, letting the paper come up the sides.

    Bake at 425°F (220°C, top and bottom heat) for 40–50 minutes, until the top is deeply golden — almost burnt — and the center still wobbles.

    Cool, then chill for at least 6 hours before serving.

Tips

  • Don't fear the dark top — that caramelization is the flavor.
  • The 6-hour chill is what sets the creamy center; overnight is even better.
