Ingredients

- 2 potatoes, peeled and sliced
- 2 tbsp butter
- 1/3 cup grated Parmesan cheese
- 3/4 tsp salt
- 1/2 tsp garlic powder
- 1 tsp dried parsley
- 2 tbsp cornstarch
- 1 egg
- Mozzarella cheese, cut into small cubes
- Oil, for frying
Method

Peel and slice the potatoes, then boil until fork-tender.

Drain well and mash the potatoes with the butter until smooth.

Mix in the Parmesan, salt, garlic powder, parsley, cornstarch and egg until fully combined.

Take a small portion of the potato mix, press a cube of mozzarella into the center, and roll into a ball, sealing the cheese inside.

Deep fry in 350°F (175°C) oil until golden and crispy all over.
