Crispy Cheesy Beef Taquitos
Golden pan-fried taquitos rolled around saucy chipotle-spiced beef and two melty cheeses, served with a creamy garlicky avocado-cilantro sauce for dipping. Crunchy outside, cheesy inside — the appetizer that never survives the first five minutes.

Ingredients
Taquitos
- 1 lb ground beef
- 1/2 yellow onion, diced
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp chili powder
- 2 tsp oregano
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1 tsp chipotle powder
- 1 tsp beef bouillon powder
- Salt and pepper, to taste
- 2 tbsp tomato paste
- Splash of water
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup Monterey Jack cheese, shredded
- Flour tortillas
- Oil, for frying
Avocado sauce
- 1 large avocado
- 2 tbsp mayonnaise
- 2 tbsp olive oil
- 4 cloves garlic
- 1/2 bunch cilantro (about 1/2 cup)
- Juice of 1 lime
- 1 tsp adobo seasoning
- Salt and pepper, to taste

Heat a little olive oil in a skillet over medium heat and cook the diced onion until translucent.

Add the beef and cook until browned, 6–8 minutes. Drain excess grease if needed.

Stir in the garlic powder, onion powder, chili powder, oregano, cumin, coriander, paprika, chipotle powder, beef bouillon, salt and pepper.

Mix in the tomato paste and cook 2–3 minutes, then add a splash of water, reduce the heat, cover and simmer 10–12 minutes until saucy.

Warm the tortillas slightly so they're flexible. Spoon beef filling and both cheeses along one side of each tortilla, roll tightly, and secure with a toothpick.

Heat 1–2 inches of oil to 350°F (175°C) and place the taquitos in seam-side down.

Fry 2–3 minutes per side until deeply golden and crispy, then drain on paper towels.

Blend the avocado, garlic, mayonnaise, cilantro, lime juice, adobo, olive oil, salt and pepper until smooth. Serve the taquitos hot with the avocado sauce.

Tips
- Seam-side down first is the secret — it seals the roll so it never unravels.
- Don't overfill; a few spoonfuls rolls tighter and fries crispier.
- The avocado sauce keeps its color for a day if you press plastic wrap onto the surface.
