This is the kind of dinner that tastes like it took way more effort than it actually did — golden chicken, a garlicky Parmesan cream sauce, and fettuccine all coming together in one skillet in under 40 minutes. The real secret is deglazing the pan with chicken broth right after the chicken and onions cook, so every browned bit left behind melts into the sauce instead of getting wiped away. It's rich without being heavy, silky without a ton of fuss, and exactly the kind of comfort food you want on a weeknight when you still want it to feel a little special. Serve it straight from the skillet with a scattering of parsley and you've got a restaurant-worthy plate with pantry-staple ingredients.
Why you'll love this recipe

- Ready in about 40 minutes
- Silky sauce with just pantry staples
- Easy to bulk up with veggies
Ingredients

Chicken & pasta
- 1 lb (450g) boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt and black pepper, to taste
- 8 oz (225g) pasta (fettuccine, penne or spagetti)
Creamy Parmesan sauce
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup (240ml) chicken broth
- 1 cup (240ml) heavy cream
- 1/2 cup (50g) grated Parmesan cheese
- 1/2 tsp dried Italian seasoning
- Salt and black pepper, to taste
To serve
- Fresh parsley, chopped
Ingredient notes & substitutions
- Chicken breasts:
- Slice into even bite-sized pieces so they cook through quickly and stay juicy; thighs work too if you want a richer bite.
- Heavy cream:
- This is what gives the sauce its silky body — half-and-half will work in a pinch but won't thicken quite as much.
- Parmesan:
- Grate it fresh off the block if you can; pre-shredded versions have anti-caking additives that can make the sauce grainy.
- Chicken broth:
- Use this to deglaze the pan right after the onions — it lifts all the browned bits that carry the flavor of the seared chicken.
- Pasta:
- Fettuccine holds the creamy sauce beautifully, but penne or spaghetti work just as well if that's what's in your pantry.
- Italian seasoning:
- A blend of dried basil, oregano and thyme rounds out the sauce; fresh basil or oregano stirred in at the end works too.
Method

Cook the pasta in salted water until al dente, per the package. Drain and set aside. Season the chicken with salt and pepper and slice into bite-sized pieces. Heat the olive oil in a large skillet over medium-high. Cook the chicken 5–7 minutes until browned and cooked through, then remove and set aside. Reduce the heat to medium, add the onion and cook 3–4 minutes until softened. Stir in the garlic and cook 1 minute until fragrant. Pour in the chicken broth and bring to a simmer, scraping up the browned bits from the bottom of the skillet — that's the flavor base. Stir in the cream, Parmesan and Italian seasoning, season with salt and pepper, and simmer gently on low for 5 minutes until slightly thickened. Return the chicken to the skillet, add the drained pasta and toss until everything is coated in the creamy sauce. Serve immediately, scattered with fresh parsley.

Tips
- Don't skip scraping the browned bits when the broth goes in — deglazing is where the depth comes from.
- Sauce too thick? Loosen it with a splash of pasta water; the starch keeps it silky.
- Spinach, mushrooms or sun-dried tomatoes all drop straight into the sauce if you want to stretch it.
Variations to try
- Stir a couple handfuls of baby spinach into the sauce right before adding the pasta so it wilts in
- Add sliced mushrooms with the onions for an earthier, heartier sauce
- Toss in chopped sun-dried tomatoes for a tangy, slightly sweet contrast to the cream
- Swap the chicken broth for white wine when deglazing for a brighter, more restaurant-style sauce
Storage & make-ahead
Leftovers keep well in an airtight container in the fridge for up to 3 days. The sauce will thicken as it chills, so reheat gently on the stove or in the microwave with a splash of chicken broth or milk to bring it back to a silky consistency. This dish doesn't freeze especially well since cream sauces can separate once thawed, so it's best enjoyed fresh or within a few days.
Frequently asked questions
- Can I make this ahead of time?
- You can cook the chicken and prep the sauce base a few hours ahead, but for the best texture, boil the pasta and finish tossing everything together right before serving.
- My sauce turned out too thick — what do I do?
- Loosen it with a splash of reserved pasta water or a little extra chicken broth; the starch in the pasta water helps keep the sauce silky instead of watering it down.
- Can I use a different cut of chicken?
- Yes, boneless skinless thighs work great here and stay extra juicy — just cook them a couple minutes longer since they're a bit thicker.
- What can I substitute for heavy cream?
- Half-and-half will work in a pinch, though the sauce will be a little thinner and less rich, so simmer it a bit longer to help it thicken.
