Ingredients

Noodles
- 3 pack Buldak (Samyang) hot chicken ramen
- 1/2 cup milk (or single cream for extra richness)
- 1 slice cheese or 1/4 cup grated mozzarella
- 1/4 cup grated cheddar
Dumplings
- 6-8 frozen dumplings (gyoza or potstickers)
To finish
- Grated parmesan
- 1 green onion, sliced
- 1 tsp sesame seeds
- Chilli flakes, to taste
Method

Pan-fry the dumplings in a little oil until golden and crispy on the bottom, then add a splash of water and cover to steam until cooked through. Set aside. Boil the buldak noodles in water for about 3 minutes until just tender, then drain most of the water, leaving a couple of tablespoons in the pan. Lower the heat and stir in the butter, milk and the buldak sauce and seasoning sachets until combined and creamy. Add the cheese and stir until fully melted into a smooth, creamy, glossy sauce. Plate the creamy noodles and top with the crispy dumplings. Finish with grated parmesan, green onion, sesame seeds and chilli flakes to taste.

Tips
- Add the milk gradually — it tames the heat and makes the sauce creamy without going watery.
- Swap the dumplings for any frozen ones you love, or use leftover cooked ones.
- For extra richness, use single cream instead of milk.
