Vanilla sponge
- 4 large eggs, room temperature
- 1/2 cup (100g) granulated sugar
- 1 teaspoon vanilla extract

- 1 1/4 cups (300ml) whole milk
- 3 large egg yolks
- 1/3 cup (67g) granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon butter
Chocolate ganache
- 4 oz (115g) dark chocolate (55-65%), chopped
- 1/2 cup (120ml) heavy cream

- Egg yolks:
- They give the pastry cream its rich, custardy body and golden color. Save the whites for another bake, or an egg-white omelet.
- Cornstarch:
- It thickens the pastry cream to a pipeable, sliceable consistency. Whisk constantly as it cooks so it stays glossy and smooth, not lumpy.
- Whole milk:
- Full-fat milk makes the richest, silkiest crème pâtissière. Heat it until just steaming before tempering into the yolks.
- Dark chocolate:
- Use a good 55-65% dark chocolate for a ganache that's glossy and balanced. Go higher (70%) if you like it more bittersweet.
- Butter:
- A tablespoon stirred into the finished pastry cream adds shine and a silky finish.

Preheat the oven to 350°F (175°C) and line a 10x15-inch jelly roll pan with parchment.
