  • Brioche Dough
  • 4 cups (500g) bread flour
  • 1 cup (240ml) warm whole milk
  • 2¼ tsp instant yeast
  • ¼ cup (50g) granulated sugar
  • 2 eggs
  • ¼ cup (60g) unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 tsp salt
  • Filling
  • 8 oz (225g) cream cheese, softened
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • Topping
  • ½ cup fresh blueberries
  • ½ cup fresh raspberries
  • Vanilla Glaze
  • 1 cup powdered sugar
  • 2–3 tbsp milk
  • ½ tsp vanilla extract
  • Finish
  • Powdered sugar for dusting

Method

    Mix the warm milk, yeast, and sugar until combined. Add the eggs, vanilla, flour, and salt, then mix into a soft dough. Knead in the softened butter until smooth and elastic. Cover and let the dough rise until doubled in size. Divide the dough into 8 equal portions and shape into smooth balls. Place on a baking tray and let rise again for 30–40 minutes. Press a well into the center of each bun. Mix the cream cheese, powdered sugar, vanilla, and lemon zest until smooth. Spoon the filling into each bun and top with blueberries and raspberries. Bake at 350°F (175°C) for 18–22 minutes until golden. Cool slightly before drizzling with vanilla glaze. Finish with a light dusting of powdered sugar and serve warm.
