An easy 30-minute Mexican dinner board loaded with cheesy mini tacos, seasoned ground beef, crispy air fryer fries, fresh chopped salad and creamy homemade guacamole — better than takeout and perfect for busy weeknights.

Ingredients
Mini tacos
- 6 mini flour tortillas
- 1 lb (500g) ground beef
- ½ onion, diced
- 1 tbsp taco seasoning
- 1 tsp paprika
- 1 tsp dried coriander
- Salt, to taste
- 1 tbsp light soy sauce
- 2 tbsp ketchup
- Pinch of dried dill
- Mild cheddar cheese, grated
- Mozzarella, grated
Air fryer fries
- 3 potatoes, cut into fries
- Olive oil
- Salt
- Paprika
- Garlic powder
- Black pepper
Salad
- Lettuce
- Cucumber
- Tomatoes
- Onion
- Fresh coriander
Guacamole dip
- 1 avocado
- 2 tbsp plain yogurt
- 1 tbsp mayonnaise
- 2 garlic cloves
- Salt, to taste
- Paprika
- Fresh coriander
- Dill
Method

Toss the fries with olive oil, salt, paprika, garlic powder and black pepper, and air fry until golden and crispy.

Brown the ground beef with the diced onion. Season with taco seasoning, paprika, dried coriander and salt, then stir in the soy sauce, ketchup and a pinch of dill.

Fill the mini tortillas with the beef and a generous mix of cheddar and mozzarella. Toast until the cheese melts and the tortillas are golden.

Chop the lettuce, cucumber, tomatoes and onion for the salad, and finish with fresh coriander.

Mash the avocado with yogurt, mayonnaise, garlic, salt, paprika, coriander and dill until creamy.

Arrange everything on a big board — tacos, fries, salad and guacamole in the middle — and serve.
