- Chicken
- 2 chicken breasts
- 1 tbsp paprika
- 1 tsp garlic powder
- 1 tsp ground coriander
- 1 tsp mixed seasoning
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1 tbsp butter
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 2 tbsp tomato paste
- ½ cup sun-dried tomatoes, sliced
- 1 cup double cream
- Salt & black pepper
- Creamy Mashed Potatoes
- 2 large potatoes
- 2 tbsp butter
- Splash of double cream
- Splash of milk
- Salt & black pepper
- Garlic Broccoli
- Tenderstem broccoli
- 1 tbsp butter
- 1 garlic clove, minced

Marinate the chicken with paprika, garlic powder, coriander, mixed seasoning, soy sauce, and olive oil for at least 2 hours.

Sear the chicken in butter and oil until golden, then set aside.

In the same pan, cook the onion and garlic. Stir in tomato paste, sun-dried tomatoes, and double cream, then return the chicken and simmer until cooked through.

Boil and mash the potatoes with butter, cream, milk, salt, and pepper until smooth.

Sauté the broccoli in butter and garlic until tender. Serve the creamy chicken over mashed potatoes with the broccoli on the side.
